What is a Texas Twinkie?

A gigantic jalapeno is hollowed out and used to make Texas Twinkies. The brisket and cream cheese are then stuffed into the peppers, which are then wrapped in bacon and drizzled with barbecue sauce. Instead of cream cheese, Hurtado uses pimento cheese, and the stuffing is spiced with beef rub. The applewood bacon is then crisped up in a smoker before serving.

Texas Twinkies Recipe Summary

Ingredients

  • 12 tablespoons softened cream cheese
  • 1 ½ pound Beef, brisket, flat half, separable lean only, trimmed to 0″ fat, all grades, cooked, braised
  • 12 medium jalapeno peppers
  • 1 teaspoon coarse ground black pepper
  • 12 slices thick-cut bacon
  • ½ (12 ounces) bottle BBQ sauce
  • 1 teaspoon kosher salt

Directions

Follow these steps to taste the best Texas Twinkie!

Step 1

The first step would be preheating the oven to 300 degrees Fahrenheit (150 degrees C).

Step 2

In order to make a “T” shape out of the jalapenos, cut a straight vertical line from top to bottom, producing a cross-cut just under the stem. Remove and discard all seeds and membranes with a spoon. Arrange the jalapenos on a baking sheet.

Step 3

Bake for 10 minutes in a preheated oven.

Step 4

Remove the jalapenos from the oven and set them in a dish of ice water to remove the remaining oil from the seeds. They will be highly spicy if you do not follow this step. Raise the oven temperature to 350°F (175 degrees C).

Step 5

Take the jalapenos out of the water and pat them dry with a paper towel. 1 tablespoon softened cream cheese should be spread inside each jalapeno. Wrap each with a slice of bacon and around 2 ounces of brisket.

Place each bacon-wrapped jalapeno on a baking sheet, season with salt and pepper, and bake for 20 minutes until soft and caramelized.

Step 6

Bake for 30 minutes in a preheated oven. Remove from the oven and brush the tops with the barbecue sauce. Continue to bake for another 5 minutes.
